Culinary Arts
Sims Academy students are able to build a strong foundation for their culinary careers through our dual enrollment partnership with Lanier Technical College. In this program, highly qualified instructors from Lanier Technical College teach students in the Career and Technical Education programs available to students through Sims Academy.
The Culinary Arts program prepares students for employment within many facets of the food service industry. Students will obtain technical skills training, focusing on food preparation, sanitation, nutrition, marketing, catering, management fundamentals, and work ethics.
The Prep Cook technical certificate of credit provides skills for entry into the food services preparation area as a prep cook. Topics include food services history, safety and sanitation, purchasing and food control, nutrition and menu development and design, along with the principles of cooking. Students who complete this certificate are positioned to earn several additional certificates that lead to a diploma or degree in Culinary Arts.

PATHWAY COURSE & DESCRIPTIONS:
Course 1—Marketing Principles - 08.47400
Prerequisite: None
Marketing Principles is the foundational course for the Hospitality, Recreation & Tourism, Marketing and Management and Marketing Communications and Promotion Pathways. Marketing Principles addresses all the ways in which marketing satisfies consumer and business needs and wants for products and services. Students develop a basic understanding of Employability, Foundational and Business Administration skills, Economics, Entrepreneurship, Financial Analysis, Human Resources Management, Information Management, Marketing, Operations, Professional Development, Strategic Management, and Global Marketing strategies. Instructional projects with real businesses, work-based learning activities including School-Based Enterprises, and DECA application experiences should be incorporated in this course.
Course 2—Hospitality, Recreation, & Tourism Essentials - 08.45300
Prerequisite: Marketing Principles
The second course in this pathway will educate about trendy vacation destinations and how to choose the best lodging for business and leisure travelers. This course will examine the income opportunities associated with conventions, tradeshows, and entertainment events. Students will explore the lucrative career opportunities in the lodging, food, recreation, and transportation industries.
Course 3—Hospitality, Recreation, & Tourism Management - 08.45400
Prerequisite: Hospitality, Recreation & Tourism Essentials
For this capstone course, an emphasis will be placed on the legal environment, human resources, diversity, and ethics from a management perspective. Strategies for growing and maintaining a profitable organization are the cornerstones of this course offering.
